Making kimchi the old way

In years past the Koreans would make kimchi and place it in the earthen jars in the pics below, they would then bury these jars in the ground and have the hut to keep it dry. This was a natural refridgerator. They could keep this kimchi for years. Nowadays the process of making kimchi is long but the storage is diferent.
